Our micro-green cultivator in the Ordal Dining Hall provides various amounts of fresh herbs and micro greens used on our salad bar and in menus throughout the year.
Our commitment to providing fresh, local produce expands with our on-campus garden. The Augustana Campus Garden located on the edge of campus produced over 600lbs of produce last year. This garden is part of a university educational program giving students hands-on experience with business management and urban gardening.
In conjunction with the student-lead campus group, Augustana Sustainability, Augustana Dining has rolled-out a reusable to-go box on campus. The dishwasher and microwave safe green clamshell boxes are rated for thousands of uses thus reducing the need for disposable to-go boxes that will find their way to a nearby landfill after a very short life.
Enrolling in the to-go program is as simple as it is sustainable. To get started, simply visit any Augustana Dining cashier to purchase a green carabiner that you will turn in at your favorite dining location whenever you need a to take your meal to go. Your green to-go box is now ready to transport your meal wherever you wish, pop it in the fridge for a late night snack, or take it tomorrow for lunch. Once you are done with the green box, simply return it to a nearby cashier to receive a handy carabiner that you can securely clip on your bag to wait for your next adventure!
